Burdock Miso Soup with Seaweed

Burdock Miso SoupFor a super nourishing and detoxifying soup try this burdock miso soup with seaweed

Chop a big burdock root into small pieces.

Simmer in 2 cups of water until tender.

Pour off 1/2 the water and stir in a Tbsp of Miso Paste

Add it back to the pot and stir it well.

Add a handful of your favorite seaweed.

Cover pot and let stand for a few minutes until the seaweed softens.

You can add in any other ingredients that sound good, such as grated carrot, bean sprouts, tofu, nutritional yeast, etc.

Enjoy it in a bowl or over wild rice or noodles.
